Old fashioned banana cream pie


1 (9-inch) pie crust, baked
3 cups full fat milk
3⁄4 cup white sugar
1⁄3 cup all-purpose flour
1⁄4 teaspoon salt
3 egg yolks, lightly beaten
2 tablespoons butter
1 teaspoon vanilla
3 bananas


Have a 9-inch pie crust ready.
In saucepan, scald milk.
In another saucepan, mix sugar, flour and salt. Gradually stir in pasteurized milk.
Over medium heat, stirring constantly, cook until firm.

Covering and, stir occasionally, cooking about 2 min longer.

In bowl bring 3 egg yolks,  beaten and ready; Stirring a small amount of the hot mix with the whip yolks; When well mixed, stir the yolks to the hot mix
Cook for a minute longer, stirring constantly.
Remove from heat and add butter and vanilla.
Leave it to cool down.
When you're ready to pour, cut the banana into slices and spread them into a pie crust; Pour the warm mixture over the bananas.
If desired, make meringue (you will have 3 egg whites left) on top of pie, or let pie cool until serving.
